I made this tonight. It was sooo good, and is better for you than regular pesto. You will need:
3 cups basil leaves (remove stems and bruise leaves)
1/2 cup skim/lowfat ricotta
1/2 cup grated parmesan
4 cloves garlic, toasted in a pan and then pressed
1 shallot, minced
2 tbsp olive oil
Blend in food processor. Eat. And eat. And eat.
